When I was pregnant I craved buffalo sauce, most often brown rice with buffalo sauce, a little weird, I know. We made buffalo chicken wings for every Iowa football game and I would make a salad for lunch with grilled chicken and add buffalo sauce as the dressing. Now that I am not pregnant I still find myself wanting all things buffalo.

A few weeks ago my husband and I were craving a buffalo chicken flatbread from one of our favorite restaurants in Iowa City. Blackstone is a small local restaurant that we always go to when we go home to visit family. They have the best flatbreads, the buffalo chicken one is my favorite so I decided I wanted to recreate it. I was going to do more of a buffalo chicken pizza because, but I wasn’t sure how to make the flatbread. However, on a trip to Trader Joe’s I stumbled upon their flatbreads, which ended up being perfect. One flatbread is the perfect size for two, this isn’t a toddler friendly meal unless your toddler is into spicy things ours is not, so he got grilled cheese. This flatbread is super quick and easy can be used for a dinner or even as an appetizer for the Super Bowl.

Buffalo Chicken Flatbread:

Ingredients:

· 1 Flatbread (I used one that I found at Trader Joe’s, not gf but Simple Mills has a good pizza dough that is that would work as well.)
· 1 large or 2 small cooked chicken breasts, chopped into small pieces
· 1/4 cup buffalo sauce
· 1 stalk celery chopped
· 1 cup mozzarella cheese
· Olive oil
· Ranch, optional for topping or dipping

Directions:

1. In a skillet over medium heat, add the olive oil and add the chopped chicken and cook through (about 10 minutes).
2. While the chicken is cooking preheat the oven for the flatbread, put the flatbread on a baking sheet or pizza stone and brush the top with olive oil.
3. Once the chicken is finished move it to a mixing bowl and add the buffalo sauce, toss to coat the chicken.
4. Spread the chicken evenly over the flatbread, sprinkle the mozzarella on top and pop it into the over for 8-10 minutes.
5. While the flatbread is baking, chop the celery.
6. Once the flatbread is finished cooking add the celery on top, drizzle with ranch, slice the flatbread, and serve.
